1 tablespoon olive oil
3 medium yellow onions, chopped
2 tablespoons chopped fresh parsley
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
3/4 cup Red Duck Original Ketchup, divided
2 1/2 pounds ground beef (we like 80% lean)
1/2 cup Italian-style breadcrumbs
2 eggs, beaten
Preheat the oven to 325 F.
In a large saucepan over medium-high heat, heat up the olive oil until shimmering. Add onions, parsley, salt, and pepper, and saute until onions are translucent and soft, 8 minutes or so. Remove from heat and add Worcestershire sauce and 1/4 cup of the Red Duck Original Ketchup. Stir well and transfer mixture to a large bowl to let it cool a bit.
Add beef, bread crumbs, and eggs to the bowl, and use a fork to mix well. Transfer mixture to loaf pan and pat it down to shape. Brush the remaining 1/2 cup of Red Duck Original Ketchup over the top. Place loaf pan in a larger sheet pan, and transfer to oven.
Bake for 1 hour and 15 minutes, until cooked through. Let it rest for about 15 minutes before slicing and serving.
