Red Duck Dressing:
1/4 cup mayonnaise
2 tablespoons Red Duck Original Ketchup
2 tablespoons buttermilk

Fried Green Tomatoes:
1 lb green tomatoes, sliced into 1/2-inch slices
1 cup buttermilk
1 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
Peanut oil, for frying

Salad:
2 handfuls mixed greens or arugula
1/2 cup croutons
1/4 cup feta cheese
1 green onion, sliced
1 tablespoon olive oil
1 teaspoon red wine vinegar
Salt and pepper to taste

First, mix the Red Duck Dressing ingredients together and set aside.

To make fried green tomatoes: In a small bowl, mix together the cornmeal, flour, salt, pepper, and celery salt. Dredge tomato slices in the buttermilk first, then in the breading mixture. Coat them thoroughly.

In a medium nonstick skillet, heat up enough peanut oil over medium-high heat to cover bottom of the pan. Working in a couple of batches, add tomato slices and cook about 3 minutes per side until golden brown. Carefully remove and drain on paper towels.

To assemble salad, lightly dress the mixed greens or arugula with the olive oil and vinegar. Season to taste with salt and pepper. Divide between two plates and top with fried tomatoes, croutons, cheese, green onions, and a drizzle of Red Duck Dressing.
