3/4 lb ground beef or other meat of your choice (we used bison)
Salt and pepper to taste
2 slices white cheddar
1/2 cup crumbled blue cheese
Quick pickled red onions*
Red Duck Smoky Ketchup
2 burger buns
Season ground meat with salt and pepper and use your hands to mix well. Form into two patties.
Heat up a grill or cast-iron skillet until very hot. Cook burgers to desired doneness (roughly 2 minutes per side for medium, depending on how hot your grill or skillet is). Just before burgers are done, top them with cheeses to melt.
Assemble burgers, and enjoy! Serves 2.
*To make quick pickled red onions, slice one red onion thinly. In a medium saucepan, heat up 1 cup water, 1/2 cup apple cider or red wine vinegar, 1 tablespoon sugar, and 1 1/2 teaspoons kosher salt until boiling. Add onions and cook until softened, about 2 minutes, then remove from heat and cool. They will be ready to use in about half an hour, but are best after a day or so.
